Vanessa’s Best homemade chicken stock (aka. Chicken broth)

Use this healing versatile stock for soups and stews but also for healing your gut. If you are fasting then it’s the best thing ever to give you low calorie energy, allow your cells, tissues and organs to cleanse but at the same time fortify your system. I have relied on chicken broth whenever we are coming down with a cough or cold or if I need to reset my system for a few days.

If you use a whole organic chicken then you can make the broth as described below, then freeze some of it but then use some to make a lovely rich chicken soup. Pick off all the meat from the bones, chop it up in to small pieces and put in some  fresh vegetables of your choice ( carrots, celery, onion, turnip, parsnip, sweet potato etc) add some garlic, herbs and more water. I like to add some Amaranth (about ½ cup) which helps to thicken it a bit and add more easily digestible protein. Always add more water so its not too thick.

Option: Sometimes we will have an organic roast chicken for dinner. Rather than throw away the carcass – I use that for chicken stock! There isn’t as much meat to pick off but I can still get a good broth from it and then I add my vegetables, herbs, garlic etc for a second meal!

 To make your best chicken stock / broth you’ll need:

1x Medium onion

3x Pieces celery

3x Carrots

3x Bay leaf

1 tablespoon Peppercorns.

About 4-6 tablespoons Olive oil

1x Organic Chicken

A large pot

Fresh water - enough to fill pot

Instructions:

Put olive oil in the pot and turn on heat to low/medium. Depending on the size of your pot, the olive oil should lightly cover the bottom of your pot

Wash and roughly chop your veggies.

Add veggies to pot and cook for about 5 minutes.

 Meanwhile, wash your chicken and be sure to take out the giblets (they will be in a bag if they are included), wash them too.

Add the giblets to the searing veggies. Give it a good stir, it should be sizzling a bit by now to get the flavor out.

Add your chicken to the pot and fill with water so it’s abut ¾ full or just covering your chicken.

Add peppercorns and bay leaf

That’s it for now. Leave uncovered for about 3-5 hours simmering. Be sure to check on it in case you need to add more water if it’s gone down a lot. Try not to let it boil.

Next: strain the chicken and veggie “mess” so that you collect all the stock. (put a big bowl under the sieve)

The golden fluid that is in the bowl is the magical healing chicken stock.

You can consume it now or store it in jars in the freezer. Some people like to put it in the ice cube trays for use in soups or to melt one or two for a cup of hot stock.

*******DO NOT SCRAPE OFF THE WHITE COATING! This is where the nutrient magic lies – within this coating. When you warm up the stock/broth it will mix in and not only give the stock the amazing flavor but it will heal your gut very quickly.

I try to always have chicken stock in my freezer. You’ll be glad you did too when you can reach in and pop out a few cubes for a wonderful warming cup of chicken broth or if you want to cure a family member from a yucky cough or cold.
